Each cut offers a unique combination of flavour, tenderness and fat marbling, and we have put together a menu to appeal to a range of different preferences. For example, our 28-day matured ribeye features a rich, juicy flavour and abundant marbling, whilst our rump steak is a leaner cut with a robust flavour and satisfying chew. Sirloin strikes a perfect balance between the two with its moderately firm texture and rich beefy taste.

If you favour steak cuts on the bone, then we recommend sharing our 40 oz 28 day matured blackgate tomahawk. A tomahawk is a thick, bone-in ribeye steak, known for its long rib bone that makes it resemble a tomahawk axe handle. As well as its impressive presentation, it features rich marbling and an intense, complex beef flavour, enhanced by the marrow and connective tissues of the bone that result in a juicer and more succulent steak.

This is the chemical reaction between amino acids and sugars when exposed to high heat, resulting in the browning of the meat’s surface to form a delicious crust that enhances the overall taste and sensory experience of eating steak.
